Vegan Thai Green Curry
This Vegan Thai Green Curry is a vibrant and flavorful dish that's perfect for a quick weeknight meal. Packed with colorful vegetables and tofu, it's creamy, spicy, and delicious!
Ingredients:
- 1 can coconut milk
- 2 tbsp green curry paste
- 1 cup vegetable broth
- 1 block tofu, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp lime juice
- Fresh basil leaves, for garnish
- Cooked rice, for serving
Instructions:
Over medium heat, warm the green curry paste and coconut milk in a large pot until the smell is nice
Beans, onion, bell peppers, broccoli, snow peas, and vegetable broth should all be added
Simmer for 10 to 15 minutes, or until the vegetables are soft
Add the lime juice, brown sugar, and soy sauce and mix well
For an extra 5 minutes, cook
Add fresh basil leaves on top of the hot dish and serve it over cooked rice
