Vegan Polish Sauerkraut Pasties

They are a plant-based take on a traditional Polish dish, pasties. They are wrapped in flaky puff pastry and filled with sour sauerkraut, onions, and garlic.

Ingredients:

  • 1 cup sauerkraut, drained and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 package vegan puff pastry, thawed
  • 2 tablespoons olive oil, for brushing

Instructions:

Warm the oven up to 400F 200C and put parchment paper on a baking sheet

Put olive oil in a pan and heat it over medium-low heat

It will take about 5 minutes of cooking after adding the onion and garlic until they are soft

Put in the smoked paprika, caraway seeds, salt, and pepper

Stir every now and then for another 5 minutes

Take it off the heat and let it cool down a bit

Put some flour on a surface and roll out the puff pastry

Make squares out of it

On each square, put a spoonful of the sauerkraut mix

Fold the dough in half to make a triangle shape, then press the edges together to seal them

Crimp the edges with a fork

Once the baking sheet is ready, put the pasties on it

Use olive oil to coat the tops

Put it in the oven for 15 to 20 minutes, or until it's crispy and golden brown

Warm up and serve

Have fun!
