Vegan Chai-Spiced Apple Cider Doughnuts



These vegan apple cider doughnuts with chai spice are a great mix of fall flavors. Apple cider, chai spices, and soft doughnuts all come together to make a great treat to enjoy with coffee or tea.

Ingredients:

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • For the glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp almond milk
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Pinch of ground cloves
  • Pinch of ground nutmeg

Instructions:

Warm the oven up to 175F 350C

Grease a pan for doughnuts

Over medium heat, slowly reduce the apple cider in a saucepan until it is only 1/2 cup

Let it cool down

Whisk the flour, sugar, baking powder, baking soda, spices, and salt together in a bowl

To the dry ingredients, add applesauce, melted coconut oil, vanilla extract, and apple cider that has been slowed down

Mix everything together well

The batter should be put into a piping bag or a plastic bag with a cut-off corner

Fill up each doughnut mold about two thirds of the way to the top with batter using a pipe

Donuts are done when they spring back when you touch them after 12 to 15 minutes in the oven

The doughnuts should cool in the pan for a few minutes before being moved to a wire rack to cool all the way down

Add the almond milk, spices, and powdered sugar to a bowl and mix them together until the glaze is smooth

Let the extra glaze drip off of each doughnut after it has cooled

Put it back on the wire rack to set
